Our mission is to make the best ice cream we can, while valuing and respecting — creating a positive impact — in our region and our community. We believe that excellent ice cream can be a source of great joy and pleasure, if consumed in moderation. When eating a GULATO, you should enjoy the experience fully, without guilt or hesitation.

Authenticity

TRULY ARTISAN

We mastered gelato-making in Italy and use the Italian artisan direct method. It’s suited to small-batch production, and every recipe has its own unique mix, made from scratch each time, with no pre-prepared pasteurized bases. It’s more labor-intensive than the traditional approach (and far more careful than industrial methods), but thanks to the method and our production scale, every GULATO is a genuinely handcrafted product.

Quality

TRULY QUALITY-DRIVEN

We always use the best ingredients we can source locally, never sacrificing quality for profitability. We use fresh local milk and fruit, or high-quality purées of exotic fruits. We create and prepare most of the composed ingredients added to our gelato (caramels, cookie bases, jams, honeycomb, etc.). We’re lucky to have discerning customers who love great gelato, and that pushes us to keep making a product that always aims higher.

Innovation & Variety

TRULY SOLID

Being a young, small company lets us stay agile and keep things flowing. We’re always researching new ideas, refining recipes, and creating new flavors—whether for fun, because we’ve found a new ingredient, or for custom orders. We make time to chat with our customers—many of our most loyal have become friends—and we often craft special small-batch flavors on request or just to delight them. And of course, we offer sugar-free, vegan, and gluten-free options. Gelato is unavoidably fun, and through it we strive to create a work/service environment where everyone feels valued.

Sustainability

TRULY RESPONSIBLE

Choosing to be based in a rural area and a small community reflects our desire to be more connected to the world around us and attentive to natural cycles. Beyond supporting the local economy, we care deeply about the environment we’re part of. That translates into minimizing waste, eliminating single-use plastics in serving gelato, encouraging a circular economy, recycling whenever possible, and staying mindful of our energy, water, and other vital resources. We want our shop and terrace to be a meeting point for the diverse people who live in and pass through the region.
